Healthy choice gourmet steamers mediterrranean grilled vegetables recipe

I just tried this product and was very impressed at the texture, and flavor for a commercial vegetarian product. I'm looking for a similar recipe that I can make at home for more than one person, instead of buying 4 packets to serve for one dinner.

The product is by Healthy Choice, and its the Mediterranean grilled vegetables with whole grain rice and barley in an olive oil and tomato sauce. Ingredients listed on package are as follows, in order.

Whole Grain Brown rice, water, diced tomatoes and juice, cooked barley (brown barley? definately not pearl barley), broccoli, red peppers, eggplant, crimini mushrooms, celery, onions, chick peas, garlic, chablis reduction, tomato paste, roasted garlic, vegetable base, salt, olive oil, sugar lemon juice concentrate, dehydrated onions, red pepper sauce. (minus cornstarch and preservatives)

I'm unsure on the spicing...most knockoffs I have attempted don't even come close to tasting as nice. If anyone has something similar, doesn't have to be exact, Even if it's just a tasty suggestion but something similar to the rice/barley/grain base with veg, but has to be flavorful to please the hubby and kids, I'd be very appreciative.. (the tomato base made it a lot more familiar to the kids...and they don't usually eat a lot of vegan meals) I understand it won't necessarily be exact, but I'm looking for more vegetarian dinners w/o the additives and high sodium (600mg per 283g). Although this product is excellent for a quick lunch and.. sodium is average for a frozen dinner, I'd like something that feeds more than one. :)

Cous Cous, Rice, Barley, and chick peas are all tolerated by family (only mixed with other veggies/sauce, not as stand alone sides) as well as most vegetables/nuts/etc.
