Grandma's Cookies Card # 61 Gr # 16
Pink peppermint Cookies
For about 25 cookies you will need:
1/2 cup butter, softened
1/4 cup sugar
1 egg
1/4 tsp peppermint extract
1 tsp whipping cream
1 1/3 cups all-purpose flour
1 tsp baking powders
Frosting:
1/4 cup butter, softened
1 heaping cup powdered sugar
1 Tblsp whipping cream
1/2 tsp vanilla extract
Dash red food coloring
15 peppermint candies, crushed
Preparation:
1. Cream butter with sugar until light and fluffy.
2. Add egg, peppermint extract and whipping cream. Beat until creamy.
3. Sift flour and baking powders. Add to cream mixture.
Mix until blended - dough will be stiff.
4. Wrap dough in wax paper .
Refrigerate for 1 to 2 hours.
5. Roll dough to 1/4 inch thickness on a floured board. Cut with 2 inch heart shaped cookie cutters.
Place on a ungreased cookie sheet.
6. Bake 375 F degrees. Bake 7 to minutes, or until egdes are light brown.
7. Remove from cookie sheet.
Let cool on rack.
8. For Frosting:
beat butter, powdered sugar, cream and add vanilla, beating until creamy. Add food coloring. Mix well.
9. frost cooled cookies. Sprinkle with crushed peppermint candies.
