Grandma's Cookies Card # 61 Gr # 16
Pink peppermint Cookies
For about 25 cookies you will need:
1/2 cup butter, softened
1/4 cup sugar
1 egg
1/4 tsp peppermint extract
1 tsp whipping cream
1 1/3 cups all-purpose flour
1 tsp baking powders
Frosting:
1/4 cup butter, softened
1 heaping cup powdered sugar
1 Tblsp whipping cream
1/2 tsp vanilla extract
Dash red food coloring
15 peppermint candies, crushed
Preparation:
Cream butter with sugar until light and fluffy.
Add egg, peppermint extract and whipping cream. Beat until creamy.
Sift flour and baking powders. Add to cream mixture.
Mix until blended - dough will be stiff.Wrap dough in wax paper .
Refrigerate for 1 to 2 hours.Roll dough to 1/4 inch thickness on a floured board. Cut with 2 inch heart shaped cookie cutters.
Place on a ungreased cookie sheet.Bake 375 F degrees. Bake 7 to minutes, or until egdes are light brown.
Remove from cookie sheet.
Let cool on rack.For Frosting:
beat butter, powdered sugar, cream and add vanilla, beating until creamy. Add food coloring. Mix well.frost cooled cookies. Sprinkle with crushed peppermint candies.
