My Great Recipes packet 31

Pasta , Rice, and Potatoes Card # 21 Gr 18

The potato, as most will agree, is versatile, nutritious and universally appealing.

For 4 servings:

4 large Idaho baking potatoes

2 eggs, seperated

4 Tblsp butter or margarine

1/4 cup whipping cream

Salt and Pepper to taste

3/4 cup grated Cheddar cheese

Preparation:

1. Wash potaoes and pat dry.
Prick each one with a fork in 1 or 2 places. Bake at 400 degrees for 1 hour or until done.

2. Cut thin slice off flat side of each potatoes.

3. Scoop out the pulp into a bowl, leaving shells intact. Beat pulp with the egg yolks until fluffy. Beat in butter and cream. Season with salt and pepper.

4. Whip egg whites until stiff and gently fold into potato mixture.

5.Spoon mixture into potato shells.
Sprinkle with the cheese.

6. Place on a baking sheet. Bake at 375 F degrees for 15 to 20 min. until the cheese is melted and the potatoes are hot. Serve immediately.

Serve with Baked Ham, asparagus, and pineapple unsidedown cake.

although this is a good recipe, unfortunately this is not the one i was looking for because i have card 21 and this is not it.

if anyone has the card from Potatoes, pasta and rice Great american Recipe collection i would really appreciate it.

but thanks Suzie, i like this one and will write it down for future reference

Great American Recipe Card Collection
Card # 14 Group 10
Twice Baked Potatoes

For 4 serving:

4 baking potatoes
3 green onions, thinly sliced
2 Tblsp butter
1/2 cup milk or half and half, hot
1/2 tsp salt
Dash black pepper
Dash nutmeg, paprika
4 slices bacon
2 Tlbsp grated Parmesan cheese
2 Tblsp grated sharp cheddar cheese

1. wash potatoes, pat dry.
2. Prick each potatoes with a fork in a few places.
3. Bake potatoes on a rack at 400 degrees F for about 1 hour or until done.
4. Cut a slice from top of each potato.
Scoop out the pulp into a bowl.
5. Mash the potato pulp into a bowl, with the hot milk,until fluffy.
Add butter and the green onion. Add seaaonings.
6. Fry the bacon till crisp.
Crumble. Add the potato mixture.
7. Spoon the mixture into the shells.
Sprinkle with both cheeses.
8. Place potatoes on baking dish.
Bake at 375 degrees F , until potatoes are piping hot. and cheese is melted, for about 15 minutes.
Serve immediately.

2 Tbsp. grated sharp Cheddar cheese
Preparation
1. Wash the potatoes, pat dry.
2. Prick each patato with a fork in a few places
3. Bake potatoes on a rack at 400 F for about 1 hour or until potatoes are done.
4. Cut a thin slice from top of each potato. Scoop out the pulp into a bowl.
5. Mash the potato pulp wit the hot milk or half and half until fluffy.Beat in the butter and the green onion. Add seasonings
6. Fry the bacon until crisp.Crumble. Add to potatoe mixture.
7. Spoon potatoe mixture into shells. Sprinkle with both cheeses.
8. Place potatoes on baking sheet. Bake at 375F until potatoes are piping hot and chesse is melted. About 15 minutes.
9. Serve immediately

Thank you, for posting this recipe...My cards were lost a move. I do have one question, weren't there variations to the original recipe. Maybe adding broccoli, or other ingredient's
