OLD FASHIONED LEMON PIE

1 c. sugar
1 1/4 c. water
1 Tbsp. butter or margarine
1/4 c. cornstarch
3 Tbsp. cold water
3 egg yolks
2 Tbsp. milk
6 Tbsp. fresh lemon juice
1 tsp. grated lemon peel
1 baked 8-inch pie crust
3 egg whites
6 Tbsp. sugar
1 tsp. fresh lemon juice
Combine sugar, water and butter (margarine); heat until
sugar dissolves. Blend cornstarch with cold water. Add to hot
mixture; cook slowly until clear, about 5 minutes. Beat egg
yolks with milk. Slowly stir into cornstarch mixture. Cook 2
minutes, stirring constantly. Remove from heat. Add 6 table-
spoons lemon juice and grated lemon peel. Cool. Pour into
cooked pie shell.
Meringue: Beat 3 egg whites until stiff; add sugar and
lemon juice and beat until very stiff peaks form. Top pie and
bake until slightly brown.

Instead of baked meringue top
add cool whip and crush candy and sprinkle on top.
That is all they do.
And not all pie fillings are the same. Some do add the comstock cooked lemon pie filling and add meringue and some use redi whip.
