Low Calorie and High Fibre Cakes Recipes
Ingredients: Ingredients for Cake
1 1/4 cups boiling water
1 cup quick oats - dry
1 stick oleo
2 Eggs
1 cup sugar
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Ingredients for Topping
6 Tsp. butter
1/4 Cup cream
1/2 Cup sugar
1 Tsp. vanilla
1 Cup chopped nuts
1 Cup coconut
Method: Pour boiling water over quick oats. Add oleo and let stand for 20 minutes.
Add rest of ingredients.
Bake in 9x13 inch pan at 350 degrees for 30 minutes.
Topping
Mix all ingredients and spread on cake.
Put under broiler for 2 or 3 minutes.

1 cup boiling water
2 cups old fashioned oatmeal
3/4 cup unsalted butter
1 cup chopped walnuts
1 cup brown sugar
1 tsp. vanilla extract
2 eggs
1-1/2 cups chopped dates
1/2 cup all purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. ground cinnamon
Preheat oven to 350?F. Pour boiling water over oatmeal. Mix well and cool slightly. Stir in next 6 ingredients. Combine remaining ingredients in a separate bowl. Stir oatmeal mixture into dry ingredients and mix thoroughly. Pour into a buttered 8 inch baking dish and bake 35 minutes.
