OATMEAL CAKE

1 c. oatmeal (quick cook)
1 1/2 c. boiling water
1 c. white sugar
1 c. brown sugar
1/2 c. Crisco oil
2 eggs
1 1/2 c. self-rising flour
1 tsp. cinnamon
Icing:
1 c. brown sugar
1 stick margarine
1 egg
1 c. coconut
1/2 c. nuts (pecans)
1 tsp. vanilla
Pour boiling water over oatmeal; let it cool. Mix
sugars, oil and eggs and add to oatmeal. Sift together flour
and cinnamon and add to oatmeal mixture. Mix well and bake in
an oblong pan at 350 degrees for 30 minutes. Makes sheet cake.
Icing: Soften margarine and mix together with the other
ingredients. Spread over cake when cake is done. Return to
oven and broil until icing is light brown.
