ALMOND POPPY SEED BREAD

3 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1 1/2 c. vegetable oil
1 1/2 tsp. salt
1 1/2 c. milk
3 eggs
1 Tbsp. poppy seed
1 Tbsp. vanilla extract
1 Tbsp. butter extract
1 Tbsp. almond extract
Mix all ingredients together. Blend 2 minutes in mixer
and pour into large greased and floured loaf pans. Bake at
350 degrees for 1 hour.
Glaze:
1/4 c. orange juice
3/4 c. sugar
1/2 tsp. vanilla extract
1/2 tsp. butter extract
1/2 tsp. almond extract
Remove loaves from pans. Bring glaze to a boil and
simmer 5 minutes. Brush glaze all over warm loaves.

LEMON POPPY SEED BREAD

1 pkg. lemon cake mix
1 pkg. instant lemon pudding
(or coconut)
1/4 c. poppy seed
1 c. warm water
4 eggs
1/2 c. oil
Mix cake mix, pudding mix, poppy seed and water. Let
stand 10 minutes. Beat eggs well, add to cake mixture with
oil. Beat until well mixed. Bake in 2 bread pans (greased) at
350 degrees for 30 to 45 minutes.
Glaze:
1 c. powdered sugar
3 Tbsp. lemon juice
1 1/2 Tbsp. melted butter
Glaze: Mix together all ingredients. The glaze will be
cold. Do not warm. Pour over hot cake.

For a tasty topper, make a glaze 3 Tbs. lemon juice and 1/4 C. confectioners' sugar until smooth and creamy. Pour over the loaf after removing it from the oven, then allow loaf to cool in pan.

1/2 C. egg substitute
1 1/2 C. all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/2 C. low-fat milk
1 Tbs. grated lemon zest
1 tsp. poppy seeds
Directions
Preheat the oven to 350 F. Coat a 9" x 5" loaf pan with nonstick cooking spray. In a medium bowl, beat the butter, applesauce, sugar, and egg substitute until smooth. In another medium bowl, combine the flour, baking powder, and salt. Add to the applesauce mixture, beating until well combined. Stir in the milk, lemon zest, and poppy seeds. Pour the batter into the loaf pan and bake for 45 to 50 minutes, or until a wooden toothpick inserted in the center comes out clean. Allow to cool in pan.
