CHOCOLATE MARBLE CREAM CHEESE PIE

For one 9 inch pie, serving 6, you will need.
Filling:
8 ounces cream cheesed, softened
1/2 cup granulated sugar
1 teaspoon vanilla
2 egg yolks
1 teaspoon unflavored gelatin
1/4 cup water
1 cup whipping cream
4 oz semi-sweet chocolate, melted
Cookie Crust:
Combine 1 1/2 cups chocolate cookie crumbs
2 Tablespoons granulated sugar
6 Tablespoons melted butter
Mix well, press into the bottom and sides of a 9 inch pie pan.
Bake 350 F Degrees for 8 minutes.
Cool.
Preparations:
1. Beat cream cheese, sugar and vanilla, until smooth.
2. Beat in egg yols, till well blended.
3. Heat gelatin and water in a saucepan over low heat.
Stir till gelatin is dissolved. Cool.
4. Beat gelatin mixture into the batter.
5. Combine 3/4 cup batter and melted chocolate.
6. Whip cream till soft peak forms.
Fold one half of whipped cream into chocolate batter and remaining half into vanilla batter.
7. With a large spoon, alternately place spoonfuls of chocolate and vanilla
batters into crust until all batters is used.
8. With spatula or knife, swirl the batter to form marble pattern..
9. Chill for 3 hours.
10. Garnish with strawberries or pecans, if desired.
MICROWAVE METHOD:
1. Prepare crust in micro-dish with melting 6 tablespoons butter.
2. Microwave at MEDIUM HIGH power until melted.
3. Stir cookie crumbs and 1 Tablsp sugar. Stir to blend.
4. Press crumbs into a 9 inch microwave pie plate.
5. Microwave at MEDIUM HIGH power for 1 1/2 mins, rotating dish one half turn after 1 minute.
6. To melt chocolate for filling, place 4 ox chocolate , broken up, in a microwave dish.
Cover with plastic wrap.
7. Microwave at Medium power for 3 minutes or until chocolate melts to glossy and soft. Chocolate scorches easily.
Chocolate will not look melted but willbecome smooth when stirred.
8. Beat cream cheese, sugar, and vanilla until smooth. Beat in egg yolks.
9. Combine gelatin and water melt over low heat. Cool slightly. Add to cream cheese batter. Combine 3/4 cup batter and melted chocolate.
10. Whip cream. Fold one half of whipping cream into chocolate batter, remaining batter vanilla batter.
11. With large spoon or spatula, alternately place chocoate batter and vanilla batters into crust.
12. Chill at least 3 hours. Garnish with strawberries or pecans.

For one 9 inch cheesecake, 8 to 10 servings, you will need;
1 1/4 cups graham cracker crumbs
1/4 cup sugar
1/4 cup melted margarine, or butter
1. In small bowl. combine graham cracker crumbs, 1/4 cup sugar and margarine / butter.
2. Press onto bottom and sides of a 9 inch pie plate.
FILLING:
8 oz cream cheese
3/4 cup sugar
3 tablespoon all purpose flour
1 egg
3/4 cup milk
1 teaspoon vanilla
3 oz semisweet baking chocolate, melted and cooled.
DIRECTIONS:
3. In medium bowl, beat cream cheese, 3/4 cup sugar and flour for 2 minutes. Beat in egg. Gradually beat in milk and vanilla.
4. Blend 1 cup batter into melted chocolate.
5. Pour chocolate mixture into crumb crust. Carefully pour remaining vanilla mixture over top. With spatula, or spoon, swirl chocolate mixture up from bottom.
6. Bake 325 F degrees for 40 to 50 minutes, or until center is set.
7. Cool completely. Chill. Serve.
