Ricotta Svingi

1 1/2 cups ricotta
2 tblspn. sugar
2 eggs
2 tblspn. baking powder
1 tsp. vanilla
1 1/4 c. flour

Cream ricotta and sugar until smooth.

Add eggs, one at a time, while continuing to beat. Add flour and baking powder.

Beat until smooth. Drop by teaspoonful into hot oil. Fry until light brown.

When done, remove with slotted spoon, and place to drain on paper toweling.

Sprinkle with powdered sugar and enjoy.
