15 minThink of this as the cocktail version of a root beer float, but for grown-ups who like their drinks rich, boozy, and impossible to put down. Silver Clouds blends a full quart of vanilla ice cream with amaretto and creme de cacao until thick and smooth, then gets a crown of whipped cream with Kahlua drizzled on top.
The trick is blending the ice cream first until it’s just creamy, then adding the liquors slowly. Pour them in too fast and you’ll thin it out into a milky mess instead of that thick, sippable consistency you want. You’re after something that holds its shape in a glass, not something you could pour through a straw.
That Kahlua drizzle on top isn’t just decoration. It gives you a hit of roasted coffee flavor in the first sip that cuts through all that sweetness and makes you reach for another taste.
Kitchen Tips
- Chill your glasses in the freezer for 15 minutes before serving for a frostier presentation
- Use premium ice cream here. Cheap ice cream with air whipped in will melt too fast and water down the drink
- Blend on low speed to keep it thick. High speed incorporates too much air
Variations
- Swap vanilla ice cream for chocolate ice cream and skip the creme de cacao for a double-chocolate version
- Add a shot of espresso to the blender for a caffeinated kick
- Make it non-alcoholic by replacing the liquors with almond extract and chocolate syrup
