Pea & Sweetcorn Fritters

These mini pea and sweetcorn fritters make a delicious healthy snack or breakfast which we sometimes serve with fried or poached eggs. We only ever use 1/2 teaspoon of the chilli flakes as this gives the fritters a bit of a kick, but doesn’t make them too spicy. When making these you might find that the fritters split or crack when you try to flip them over (it shouldn’t happen if you only use 1 teaspoon of the mixture). If this happens we’d recommend trying them with less mixture and making smaller fritters, this way it’s easier to flip them without breaking.

Ingredients

100g/3.5oz frozen peas
100g/3.5oz frozen sweetcorn
2 spring onions
1 egg
5 tbsp. milk
1/2 tsp chilli flakes
2 garlic cloves
1 tsp. apple cider vinegar
125g/4.5oz almond flour
Olive oil to fry

Ingredients

100g/3.5oz frozen peas
100g/3.5oz frozen sweetcorn
2 spring onions
1 egg
5 tbsp. milk
1/2 tsp chilli flakes
2 garlic cloves
1 tsp. apple cider vinegar
125g/4.5oz almond flour
Olive oil to fry

Directions

  1. Add all the ingredients to a food processor and blitz until well combined. If you don't have a food processor you could also just mix the ingredients in a large bowl. The fritters will have a different texture, but you will still get the same delicious taste.

  2. Add a splash of olive oil to a frying pan to heat, then add 1 teaspoon of the mixture to the frying pan and flatten with a spatula.

  3. Fry for 2 minutes over a medium heat then flip and fry the other side for 2 minutes.

  4. Repeat until all the mixture is used up.
