60 minCrispy bacon crumbles folded into waffle batter create savory pockets in every bite.
Beaten eggs provide lift and structure, while hot waffle iron creates that signature crispy exterior and steamy-soft interior.
Fresh berries on top balance the salty bacon with natural sweetness.
Pro Tips
- Beat eggs until fluffy: The recipe stresses fluffy eggs. Beat for 2-3 minutes with a whisk or mixer until they’ve tripled in volume for maximum rise.
- Don’t overmix after adding flour: Stir just until smooth, leaving small lumps. Overmixing develops gluten and creates tough, chewy waffles.
- Cook bacon first: Prepare bacon and let it drain on paper towels before starting the batter. Pat away excess grease so it doesn’t make waffles soggy.
- Serve immediately: Waffles lose crispness quickly. Serve straight from the iron or keep warm in a 200°F oven on a wire rack.
Variations
- Skip bacon for sweet version, add 1 teaspoon vanilla and 2 tablespoons sugar
- Fold in 1 cup fresh blueberries instead of bacon for fruity breakfast
- Add ½ cup shredded cheddar with the bacon for extra savory richness
