Every Brazilian birthday party has a tray of brigadeiros, and once you make them you’ll understand why. Three ingredients (cocoa, butter, and sweetened condensed milk) simmer together into a thick, glossy chocolate fudge with a texture somewhere between a truffle and caramel.

The whole game is in the cooking. Stir constantly over medium heat and watch for the moment the mixture pulls away from the bottom of the pan and leaves a trail when you drag the spoon through it. Too soon and it won’t hold a ball; too long and it turns hard and grainy. That visual cue matters more than any clock.

Let it cool completely before rolling, then grease your hands with a little butter so the sticky fudge doesn’t cling. Traditionally they’re rolled in chocolate sprinkles, but cocoa, chopped nuts, or coconut all work. Tuck each into a little paper cup and you’ve got a party.

  • Stir nonstop; brigadeiro scorches fast on the bottom and turns bitter if you walk away.
  • Cook until the mixture pulls cleanly from the pan and holds a trail behind the spoon, the sign it will set into balls.
  • Cool it fully before rolling, or it’s too soft to shape; the fridge speeds this up.
  • Butter your hands to keep the fudge from sticking while you roll.

Variations

  • Roll in chocolate sprinkles, shredded coconut, crushed nuts, or cocoa powder.
  • Skip the cocoa and lean on coconut for branquinho, the white cousin.
  • Spoon it warm into a bowl and eat it soft, Brazilian-style, as brigadeiro de colher.

Ingredients

3 tablespoons unsweetened cocoa
1 tablespoon butter
1 (14 ounce) can sweetened condensed milk

Directions

In a medium saucepan over medium heat, combine cocoa, butter and condensed milk. Cook, stirring, until thickened, about 10 minutes. Remove from heat and let rest until cool enough to handle. Form into small balls .
