60 minEvery Brazilian birthday party has a tray of brigadeiros, and once you make them you’ll understand why. Three ingredients (cocoa, butter, and sweetened condensed milk) simmer together into a thick, glossy chocolate fudge with a texture somewhere between a truffle and caramel.
The whole game is in the cooking. Stir constantly over medium heat and watch for the moment the mixture pulls away from the bottom of the pan and leaves a trail when you drag the spoon through it. Too soon and it won’t hold a ball; too long and it turns hard and grainy. That visual cue matters more than any clock.
Let it cool completely before rolling, then grease your hands with a little butter so the sticky fudge doesn’t cling. Traditionally they’re rolled in chocolate sprinkles, but cocoa, chopped nuts, or coconut all work. Tuck each into a little paper cup and you’ve got a party.

1 (14 ounce) can sweetened condensed milk
Directions
In a medium saucepan over medium heat, combine cocoa, butter and condensed milk. Cook, stirring, until thickened, about 10 minutes. Remove from heat and let rest until cool enough to handle. Form into small balls .
