Ingredients

24 each clams, cherrystone
1 each garlic clove minced
4 tablespoons green bell pepper chopped
8 tablespoons butter
1 tablespoon lemon juice
6 tablespoons bread crumbs seasoned

Directions

Preheat oven to 450. Open clams and discard top shell. Place clams in a shallow baking pan. In a saucepan, melt 4 Tbsp. butter and sauté the garlic and green pepper for 2 - 3 minutes. Add remaining butter, lemon juice, and bread crumbs, mixing thoroughly. Place 1 tsp. of mixture on top of each clam and bake for 10 minutes.

I've cooked clams in almost every way; chowders, on the 1/2 shell, in sauces, and stuffed. This is first time I tried clams casino. Now I have an additional and extremely tasty way to enjoy these bi-valves. Thank you for the recipe!

I tweeked this recipe a bit. If you use chorizo instead of the pork, cook the meat in olive oil, drain the meat, add some sliced serrano peppers, use habenero sauce for the hot sauce, and use a can of tomatoes with habeneros, and leave out the beer. It is very good.
