Crispy phyllo bundles stuffed with chopped prawns, green chilli, and oyster sauce, fried golden and served with a spicy tomato-sesame dipping sauce. Ready in 30 minutes flat.

Chopped prawns get tossed with green chilli and a hit of oyster sauce, then bundled up in flaky phyllo pastry squares and fried until shatteringly crisp.
The warm dipping sauce brings tomato, chilli, and a whisper of sesame oil together for a sweet-spicy finish that ties the whole thing together.
Chef Tips
- Keep phyllo sheets covered with a damp towel while working so they don’t dry out and crack.
- Chill the assembled bundles for at least 15 minutes before frying. This helps them hold their shape in hot oil.
- These make a knockout appetizer for parties. Assemble ahead, refrigerate, and fry just before serving.

Directions
In a bowl mix together prawns, chilli and oyster sauce.
Cut filo pastry into 4 inch squares.
Place a heaped teaspoon of prawn filling in the centre of each square, draw the corners of the pastry together and twist to form little bundles.
Place on a floured serving plate and chill until required.
To make sauce, pour tomato sauce, chilli sauce, 2 tablespoons water and sesame oil into a saucepan and heat gently for 3 to 4 minutes.
Serve hot with the prawn bundles cooked in hot oil.
