| 4 | each | scallions, spring or green onions | chopped |
| 1 | small | sweet onions | sliced |
| 2 | tablespoons | cilantro | chopped |
| 1 | teaspoon | mint | |
| 1/4 | cup | olive oil | |
| 3 | tablespoons | lemon juice | |
| 1 | clove | garlic | crushed |
| 1 | x | salt and black pepper | |
| 1 | x | pita bread | wedges |
Combine tomatoes, scallions, onion, cilantro and mint.
Whisk together oil, lemon juice, garlic, salt and pepper.
Pour dressing over tomato mixture.
Cover and chill.
Serve with pita wedges.
Alternatively, this salad makes a great topping for pita stuffed with falafel.
