Thai Chicken Satay with Spicy Peanut Sauce

Ingredients

3tablespoons lime juice
3tablespoons canola oil
2teaspoons soy sauce, sodium reduced
2teaspoons fish sauce
1/2teaspoon sweet red bell pepper crushed
1pound chicken tenders
Spicy peanut sauce:
2tablespoons peanut butter smooth natural
1teaspoon lime juice
2tablespoons coconut milk light
2teaspoons soy sauce, sodium reduced
1teaspoon brown sugar, light
1x sweet red bell pepper crushed to taste

Directions

To marinate chicken:

Whisk lime juice, oil, soy sauce, fish sauce and crushed red pepper in a shallow baking dish until combined; add chicken and turn to coat.

Let marinate in the refrigerator for 15 minutes.

Preheat grill to high.

To grill chicken and serve:

Thread each chicken tender onto a wooden skewer.

Grill the chicken skewers until cooked through and no longer pink in the middle, about 3 minutes per side.

Serve warm or chilled with Spicy Peanut Sauce for dipping.

To prevent wooden skewers from burning on the grill, wrap the exposed portion in foil before grilling.

(Contrary to popular wisdom, soaking them in water doesn't prevent them from burning.)

Spicy peanut sauce:

Whisk together peanut butter, coconut milk, lime juice, soy sauce, sugar and crushed red pepper in a small bowl until smooth.

Chicken Fondue in Ginger Broth

This is a great recipe! I served it as a main dish rather than an appetizer and everyone loved it. I was worried the chicken would be bland, but it was very flavorful and light. So many meat fondue recipes use alot of oil so it was great to find such a healthy recipe. The veggies were great too.
