Ingredients

48 ounces chicken broth
6 1/2 cups water
3 1/2 pieces chicken
1/4 medium yellow onion
1 tablespoon salt or to taste
1 tablespoon cayenne pepper
1 1/2 teaspoons black pepper
1 x vegetable oil
1 1/4 cups roux at room temperature
1 1/2 pounds smoked sausage links
1 cup parsley leaves choppe
3/4 cup scallions, spring or green onions chopped
1/2 cup celery chopped

Directions
