| 2 | cups | long grain rice | |
| 2 | cups | coconut milk | |
| 1 | teaspoon | ginger | fresh, grated |
| 4 | tablespoons | vegetable oil | |
| 1 1/2 | teaspoons | mustard seeds, black | |
| 8 | each | red chilis, dried | |
| 1/3 | cup | sesame seeds | |
| 1 | cup | coconut flakes | fresh |
| 1 | x | salt | to taste |
Soak 2 cups long grain rice in water, meanwhile boil 2 cups coconut milk + 1 1/2 cups water + 1 teaspoon grated fresh ginger.
Drain and add the rice, bring to a boil again, cover, turn off heat.
In separate pan, fry 4 tablespoons oil + 1 1/2 teaspoons mustard seeds until they pop.
Add 8 chopped dried red chillies and brown Add 1/3 cup sesame seeds and brown lightly.
Pour the flavored oil + 1 to 1 1/2 teaspoons salt over rice, toss in 1 cup flaked fresh coconut (or dried unsweetened that's been soaked).
