25 minThese baked cheese sandwiches use a whipped cheddar and butter spread that puffs up in the oven into something almost souffle-like. Sharp cheddar gets blended with softened butter, eggs, garlic salt, and onion salt until creamy, then spread on both the inside and outside of the bread before baking.
Spreading the cheese mixture on the outside of the top slice is what makes these different from a regular grilled cheese. That exposed layer of cheese-butter-egg mixture bakes into a golden, slightly puffy crust with a paprika-dusted top. It’s part sandwich, part cheese toast, part something entirely its own.
The eggs in the spread are the trick. They lighten the mixture and help it puff and set during baking instead of just melting flat. What comes out of the oven looks and feels more substantial than a regular grilled cheese.
These freeze beautifully. Assemble, cut in half, freeze on a sheet pan, then bag them. Bake straight from frozen, adding a few extra minutes.

- Grate the cheese finely before blending with the butter. Coarse shreds won’t incorporate smoothly and leave lumpy patches.
- Use softened butter, not melted. Softened butter whips into the cheese and eggs creating a fluffy, spreadable mixture. Melted butter makes it greasy and flat.
- Don’t skimp on the paprika. It adds color and a gentle warmth to the golden crust.
- Bake on the middle rack for even browning. Too high and the tops burn before the inside melts.
Variations
- Swiss and Dijon: Swap the cheddar for Swiss cheese and add a teaspoon of Dijon mustard to the spread for a more refined, French-inspired version.
- Everything seasoning: Sprinkle everything bagel seasoning on top instead of paprika for a trendy, crunchy twist.

In a mixer, blend cheese which has been grated and butter.
Add eggs and salt.
Whip until creamy. Spread mixture on slice of bread, place another slice of bread on top and spread it with cheese mixture.
Sprinkle with paprika.
Cut into halves. Bake 10 to 15 minutes in a 400℉ (200℃). oven.
These may be frozen and baked as needed .
