45 minAlso known as magic cookie bars or seven-layer bars, Hello Dollys are the laziest genius dessert ever invented. Melt butter in the pan, layer everything on top, pour condensed milk over the whole thing, and bake. No mixing bowl, no creaming, no fuss.
The sweetened condensed milk is what holds the magic together. It seeps down through the layers as it bakes, binding the chocolate chips, coconut, and pecans into a gooey, candy-like slab on top of a buttery vanilla wafer crust.
Resist cutting these while they’re warm. They look done but the condensed milk needs time to set as it cools. Warm bars will ooze apart. Cooled bars slice cleanly into neat squares.
Pro Tips
- Press the vanilla wafer crumbs firmly into the melted butter to form a solid base. Loose crumbs mean the bars fall apart when you cut them.
- Layer in the order given. The crumbs go first (they need the butter), the condensed milk goes last (it needs to drip down through everything).
- Let cool completely in the pan before cutting. Patience pays off with clean edges.
- Line the pan with parchment for easy removal and even cleaner slices.
Variations
- Use graham cracker crumbs instead of vanilla wafer crumbs for a more traditional magic bar base.
- Add a layer of butterscotch chips alongside the chocolate for a dual-chip version.
- Swap pecans for macadamia nuts and use white chocolate chips for a tropical twist.
