| 1 | pound | potatoes | |
| 1 | cup | pizza sauce | |
| 1 | teaspoon | oregano leaves | dried |
| 1/2 | each | green bell pepper | |
| 2 | tablespoons | scallions, spring or green onions | sliced |
| 2 | cups | mozzarella cheese | shredded |
| 1/4 | cup | parmesan, parmigiano-reggiano cheese, grated | grated |
Heat oven to 450 degrees.
Coat 12-inch round pizza pan with vegetable cooking spray.
Arrange frozen potatoes evenly in one layer in pan.
Bake 10 minutes. Remove pan from oven and cover potatoes with sauce.
Sprinkle with oregano. Arrange pepper strips on sauce; sprinkle with onions and top with cheeses.
Bake about 15 minutes until top is lightly browned.

Very easy to make. Great for a work-day. I just set it up the night before, turned it on in the morning, and dinner was ready--with a salad waiting in the frig! The bonus is that it's very tasty, also.
