Ingredients

12 ounces mushrooms finely chopped
12 ounces scallions, spring or green onions finely chopped
12 ounces adzuki beans cooked
3 tablespoons olive oil
2 teaspoons tarragon
1/2 teaspoon dill seed
1/2 teaspoon salt

Directions

Preheat oven to300 degrees.

Lighly grase a 4 x 8 baking dish with sesame oil.

Combine all ingredients and place in the baking dish.

Bake for 25 minutes with a cover.

Greek Orzo Stuffed Peppers

Very clean and fresh tasting and looked amazing. The Greek flavors perfectly matched each other. I added a splash of high quality extra-virgin olive oil just before serving. Even with the light clean taste it turned out to be quite filling with the orzo and chickpeas. The presentation looks great, will definitely be making this for company.
