10 minThese little fish-shaped sandwiches are built for kids who need some fun with their lunch. Bread gets cut into fish shapes, spread with a cream cheese and diced cucumber mixture, layered with flaked canned salmon, then topped with thin cucumber slices arranged like scales.
The cream cheese-cucumber spread holds the flaked salmon in place and adds a cool, creamy base. Kids who claim they don’t like fish tend to change their minds when the sandwich looks like one.
No cooking, no heating, just assembly. This is a 10-minute project that works for packed lunches, after-school snacks, or a fun hands-on kitchen activity with little ones.
Kitchen Tips
- Use a fish-shaped cookie cutter on the bread slices. If you don’t have one, cut freehand with a knife. It doesn’t have to be perfect.
- Drain the canned salmon thoroughly and press out excess liquid so the sandwiches don’t get soggy.
- Soften the cream cheese to room temperature before mixing with the cucumber. Cold cream cheese tears the bread.
Variations
- Use canned tuna instead of salmon for a milder, more familiar flavor for picky eaters.
- Add a squeeze of lemon juice and a sprinkle of dill to the cream cheese mixture for a grown-up version.
- Swap the bread for mini pita rounds and serve open-faced for a party appetizer.
