Salted roasted peanuts get tossed with curry powder, seasoned salt, and a touch of garlic powder, then hit a hot oven just long enough for the spices to toast and cling to every nut. The warmth of the curry and the savory punch of the garlic make these disappear by the handful.

Set out a bowl at your next party or bag them up for on-the-go snacking. Fair warning: you’ll want to double the batch.

Kitchen Tips

  • Watch them closely in the oven. Five minutes goes fast and the spices can burn quickly once they’re hot.
  • Let them cool completely on the baking sheet before transferring. They crisp up as they cool.
  • Scale this up as much as you want. Just spread the peanuts in a single layer so they toast evenly.

Directions

Combine spices and mix with peanuts.
