Chicken with East-West Marinade

Ingredients

1 whole chicken split in half
6 cloves garlic minced
2 tablespoons ginger finely minced
1 x lime zest minced
1/3 cup lime juice
1/3 cup olive oil
1/3 cup hoisin sauce
1/3 cup rice wine or sherry
1/4 cup soy sauce thin
2 tablespoons honey
1 tablespoon chili sauce asian
1 cup basil fresh, cilantro, and mint, mixed
1/4 cup parsley leaves fresh, chopped
2 each scallions, spring or green onions minced, greens included

Directions

Combine marinade ingredients and cover chicken with marinade in a bowl or sealable plastic bag.

Refrigerate at least 30 minutes or up to 8 hours before grilling.

Remove chicken from marinade and grill over medium heat about 12 minutes per side, or until done.

Baste occasionally with marinade while cooking.

Serves 4.

Naturally Sweet Pineapple Muffins

The texture was pretty good. Without adding any sugar, it was just missing something. I like to eat muffins just as they are, but you got to serve them with butter and jam or something. Otherwise, just tasteless.
