The Lady and Sons Hush Puppies

6 cups peanut oil
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten
Using a deep pot, preheat oil for frying to 350 degrees F.
Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion.
In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hush puppy is dropped in the oil. Fry until golden brown, turning the hush puppies during the cooking process.
Yield: 35 hush puppies
Long John Silver's Hush Puppies
1 cup self-rising flour
1 cup cornmeal
1 onion chopped fine
2 teaspoons baking powder
1 teaspoon granulated sugar
1/2 teaspoon salt
1 egg
Dash of Tabasco sauce
Milk
Oil (for deep frying)
Mix first 8 ingredients together. Add milk a little at a time until you have the right consistency. Drop by tablespoonsful into oil one at a time. Remove when golden brown.
Hush Puppy Mix in a Jar
1 1/2 cups yellow cornmeal
3/4 cup all-purpose flour
3 tablespoons dried minced onion
1 teaspoon baking powder
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground red pepper
In a large bowl, combine all ingredients and mix well. Store in a resealable plastic bag or jar. Makes 2 1/4 cups mix.

Hush Puppies
In a deep skillet, heat 1 1/2 inches of vegetable oil to 350 degrees F.
In a medium bowl, combine contents of jar with 1 1/2 cups buttermilk and 1 beaten egg. Stir until well blended. Drop mixture by spoonsful into hot oil. Fry until golden brown and thoroughly cooked through. Drain on paper towels and serve.
