Here is my own recipe for Grasshopper Pie. It's a one-of-a-kind I came up with as a teenager. I thought it was cool to make something with liqueur. It's still requested by my family during the holidays.
Cheese Cake Grasshopper Pie
(from Kathi Browne, 1986)
1/2 cup whole milk 1 cup whipped cream
20 large marshmallows 11/4 cups choc.cookie crumbs
8 oz cream cheese 1/4 cups melted butter
2 Tbsp crème de cacao chocolate shavings
2 Tbsp crème de menthe
Heat milk and marshmallows until melted, stirring frequently. Add cream cheese and stir until thoroughly mixed. Cool. Add liqueurs and then fold in whipped cream. Mix cookie crumbs and butter and press into pie shell. Pour into chocolate pie shell and top with chocolate shavings. Freeze until ready to serve.
Sometimes I cut back on the milk to give it a softer cheesy texture. The milk freezes too hard for those with dentures.
