Dazey waffle iron

Years ago I was given a Dazey waffle iron. No instruction booklet, I info on "how to use"!

Makes about 32 pieces

Before you even start, sharpen a thin knife well. I use a filleting knife.

Wafel Dough:
1 teaspoon instant yeast
1 teaspoon sugar
1/2 pound unsalted butter
1/3 cup sugar
Pinch of salt
1 rounded tablespoon ground cinnamon (...don't even be tempted to use less)
3 cups flour (...more or less, depending on other moisture in the mix)
1-2 eggs (...how small are they? ...how much richer do you want the wafels to taste?)

Proof yeast in 3 tablespoons water with 1 teaspoon sugar until bubbly. Beat butter until light, adding sugar, salt and cinnamon. Mix in the yeast mixture, flour and egg(s) and knead or beat well. Set in a warm place for about an hour. It will not look like it's rising much; don't worry. Meanwhile, make the syrup (stroop).

Stroop (Syrup):
1 tablespoon ground cinnamon
1 cup Karo light syrup
7/8 cup light brown sugar
1/4 cup butter

Heat cinnamon, syrup and sugar on stove and cook slowly until thickened a bit (about 10 minutes). Remove from heat and beat in butter. Should thicken as it cools, but still be slightly warm and thin enough to spread easily. If it cools too much, reheat gently; if it thickens too much, add a bit of liquid.

To bake and prepare, use:

waffle Iron,
Very sharp, thin fillet knife
1-1/2" diameter ice cream scoop
3" round metal cookie cutter

Heat wafel iron and oil lightly only once. Using scoop to measure, place dough in center of heated wafel iron and bake for one minute (no longer, or you'll risk burning them).

When done, remove from iron, place flat on counter and immediately slice wafel horizontally into two thin wafers, using the sharp fillet knife. (This is where you need a set of asbestos fingers.) Spread syrup on one cut surface, reassemble pressing gently but firmly, and trim to a uniform shape with the 3" cookie cutter. (This introduces one of the all time best traditions of making stroopwafels: eating the trimmings.) Cool, at least slightly, flat on a rack before eating.

Don't see why you couldn't eliminate all that cinnamon and play with other flavorings

Ok, I just got a Dazey Waffle Iron yesterday. It is called the Short Order Chef and it has reversable plates. This means it can make waffles with the plates one way and if you reverse them, you can open it flat and use it like a griddle or close it and make griled sandwiches.

I got it at a thrift store (Goodwill) and it was $7.99 U.S. and looks like new. Though I can tell it is older because of its style or design. It also came with no manual but I did this and it worked fine.

First go and get a box of complete pancake mix and doctor it, you will love these and they are easy and yummy.

I dont measure because my mom (God bless her) taught me to cook home style (a pinch of this and a dab of that). Anyways use hot water from the sink is fine, I use hot water from the coffie pot.
Get a 1 or 2 quart bowl and put in about 2 cups of water.

Add in one egg (any size I use large egg)
Add in about 1/4 to 1/2 cup oil (I used organic canolla, olive and sundried tomato oil)
Mix it with a fork and start adding in the pancake mix. Keep adding in the mix and mixing with a fork or wisk till it is thicker than you would for pancakes but not to much thicker.

Heat the waffle iron till the light goes out.
Use a soup laddel or small cup to scoup and pour it on the griddle.

I did this test
open it and spray on cooking spray
put on one scoup in the middle and close it.
Wait 1 minute and open and remove the waffle.
tast it, if you like it, you are set
if not, 1 more scoup and wait 3 minutes then test
by the 4th scoup you have about the time you want
if at any time you think it is not thick enough, just add more mix and go from there. I got a cheap box of store brand Walmart mix for $1.49 and everyone loves them. Its theoil and egg that makes it taste like a waffle. But if you like you can use pancake mix that tells directions on it how to convert mix from pancake to waffle.

My waffle iron I set ot dark and cook my waffle for 5 ot 6 minutes because I like my waffle crispy on the outside and soft on the inside.

Another tip, I buy Log Cabin Sugar Free syrup and take it home and microwave 3 tablespoons of butter and add it to the bottle and shake it up. This way I dont have to butter my waffle and it makes the syrup taste awesome.
