I am looking for a recipe I had several years ago. The only ingredients I can remember for sure are cocktail onions, cottage cheese, and sliced tomatoes on top. I remember that it was cut out of something, not just a hand written that was passed along. Looking forward to any input. Thanks.
TOMATO ONION CHEESE CASSEROLE
-----------
3 c. thinly sliced onion
4 large tomatoes or 3 c.
canned tomatoes
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. dried basil
4 slices Cheddar cheese
1/2 c. seasoned bread crumbs
3 Tbsp. butter
Lightly grease a 1 1/2 quart casserole dish in 1-
inch of
boiling water in a medium saucepan. Cook onions
covered for 10
minutes. Layer in casserole dish 1/2 of
tomatoes, onions,
pepper, basil and cheese. Repeat again. Toss
bread crumbs
with butter. Sprinkle over top of casserole.
Bake uncovered
at 350 degrees for 30 to 35 minutes or until
tomatoes are tender.
