i'm looking for a salad recipe that would be similar to something I bought at harris teeter (a grocery chain in the Southeast. I wrote the company, but they replied that the recipe is proprietary...it's a multi-grain salad, served cold, w/ dried cranberries (? craisins?), in a vinaigrette dressing. Any ideas?
its the only one i know its the one your looking for but try it out ok
Multigrain & Cranberry Waldorf Salad
2 lbs. Kansas Medley (It consists of Wheat Berry, Wild Rice and parboiled long grain rice.)
4 Granny Smith Apples, cored and diced
Juice of 1 Lemon
3 Cups Dried Cranberries
3 Cups Celery, diced
2 Cups Walnuts
32 oz. Mayonnaise
1 Cup Brown Sugar
1/2 Cup Apple Cider Vinegar
Cook Kansas Medley according to package directions and cool immediately. Toss diced apples with lemon juice to prevent browning. In a separate bowl, mix mayonnaise, brown sugar and apple cider vinegar until blended well. Toast walnuts if desired. Combine all ingredients and mix well. Chill for service
