McCalls Beef Slices in Wine

Makes 6 servings
This is a classic recipe from a 1973 McCall’s recipe card collection. Very good!!
ingredients
2 lb flank steak
1/4 c butter
1/4 cup chopped parsley
2 clove garlic
1/2 tsp salt
1/4 teasp dried basil, rosemary, and oregano
1 can (8oz) tomato sauce
1 cup red wine
1/2 lb fresh mushrooms
1 tablsp flour
1 pkg (8oz) noodles
2 Tblsp parsley, chopped for garnish
directions
1.
Wipe off steak with damp paper towels.
With sharp knife, trim off fat.

Slice steak crosswise into diagonal slices, 1/4 in thick.
If steak is placed in the freezer, for 30 mins, it will be easier
to slice.

In hot butter in a large dutch oven, saute slices, a few at a time
until brown on both sides. As slices brown, remove them from Dutch oven.
Continue till all meat is brown.
Remove to plate . Pour off drippings.

To dutch oven add garlic, 1/4 cup parsley, salt,, rosemary, basil, oregano, tomato sauce, wine and meat..

Simmer , coverer and stirring occasionally, until meat is tender - about 1 hour.

Add mushrooms and simmer, covered 5 mins.

In small bowl, combine 2 tablspoons water and flour, mix well. Stir into beef mixture. Bring to a boiling and stirring
reduce heat, and simmer, 1 minute, or until mixture is thickened.
8.
Meanwhile,cook noodles as pkg labels direct. Drain.
9.
To serve: Spoon beef into center for deep serving dish.
Surrounded with noodles. Sprinkle with 2 tablspoons chopped parsley.
