Banana Nut Bread, Mccall's

2 1/2 cups sifted all purpose flour
3 teaspoons baking powder

1/2 teaspoon salt
1 cup sugar -- `

1/4 cup soft butter -- or margarine
1 egg -- beaten
1 cup mashed bananas -- 3 small ripe
2 tablespoons grated orange peel -- or lemon peel

1/2 cup milk
1 cup chopped pecans -- or walnuts

Preheat oven to 350F. Grease a 9-by-5-by-3-inch loaf pan.

Sift flour with baking powder and salt; set aside.

In medium bowl, with portable electric mixer or wooden spoon, beat sugar,
butter, and egg until smooth.

Add bananas, orange peel, and milk, mixing well. Add flour mixture, beating just
until smooth. Stir in nuts.

Pour batter into prepared pan; bake about 1 hour, or until cake tester inserted
in center comes out clean.

Let cook in pan 10 minutes. Remove from pan; cool completely on wire rack. To
serve, cut into 12 slices.

Makes 1 loaf cut into 12 slices.

NOTES : I added 1/2 teaspoon vanilla, this is the banana bread I made prior to
becoming a diabetic.

McCall's Best Nut Bread

Recipe

Yields: 1 loaf

2½ cups sifted all-purpose floru

3 teaspoons baking powder

½ teaspoon salt

1 egg,beaten

1 teaspoon vanilla extract

¾ cup sugar

¼ cup butter,melted,or salad oil

1¼ cups milk

1 cup fine chopped walnuts or pecans


Preheat oven to 350 degrees. Grease a 9×5×3-inch loaf pan.

Sift flour with baking powder and salt.

In large bowl, combine egg, vanilla, sugar and butter. Using wooden spoon or portable electric mixer, beat until well blended. Add milk, blending well.

Add flour mixture, beating until smooth. Stir in nuts.
Pour batter into prepared pan; bake 60 to 65 minutes, or until cake tester inserted in center comes out clean.

Let cook in pan 10 minutes. Remove from pan; cool completely on wire rack. To serve, cut into thin slices’

Cherry-Raisin Nut Bread: Use walnuts reducing amount in Best Nut Bread recipe to ½ cup. Combine ¼ cup finely chopped, drained maraschino cherries, ½ cup seedless raisins and ½ teaspoon almond extract with vanilla. Add to batter along with nuts. Bake as directed.

Shape Variations

#1. Divide batter evenly among 4 greased 5½×3¼×2¼-inch pans; bake at 375, 25 minutes, till cake tester inserted in center comes out clean. Let cool in pans 10 minutes. Remove from pans; cook completely on wire rack. To serve, cut into thin slices.

#2. Divide batter evenly among 6 greased 10½ ounce cans, filling half full. Bake at 375 degrees, 35 minutes, till cake tester comes out clean. Cool in cans 10 minutes. Remove from cans; cool completely on wire rack. To serve cut into thin slices.

#3. Divide batter evenly among 4 greased 1 pound 4 ounce cans, filling half full. Bake at 375 degrees, 40 minutes, till cake tester inserted in center comes out clean. Cool in cans 10 minutes. Remove from cans; cool completely on wire rack. To serve, cut into thin slices.
