Broccolli Salad ... this is wonderful

*Fresh Broccoli heads ... I use close trim broccoli ... about 3 5inch diameter heads. Seperate into bite size pieces into a bowl.

*Small onion ... chopped or sliced thinly. (I prefer thinly sliced) Put into bowl.

*Fry up 1/2lb. - 3/4 lb of bacon ... really crisp. I microwave for crispness. Chop into kind of large pieces. Put into bowl with broccoli.

Dressing: (adjust quantity according to size of your salad.)

3/4 cup of mayonaise
1/4- 1/2cup Splenda
3 -4 tablespoons white vinegar

Mix and pour over salad.

Top it off with 1/2- 3/4 cup of grated cheddar cheese. Toss.

I'm sure you've gotten thousands by now-- but I put shredded red cabbage, shredded carrots, brocolli florets, diced onions, raisins, sunflower seeds,- and use mayonaise thinned with a little water- and splenda to taste for the dressing-- church functions love it- I come home with an empty bowl. D.J.
