COOKIES
These cookies are crisp with nuts and have a touch of exotic because of the spice cardamon.
The recipe makes a large batch of delicous and easy to produce cookies for the holiday
season as well as for other times of the year.
For about 4 dozen:
You will need:
1 cup soft butter or margarine
1/2 cup each granulated sugar and packed brown sugar.
1 egg, seperated
1 tsp vanilla or almond extract
2 cups all purpose flour
1 tsp gr cardamon
1/4 tsp salt
1/3 cup chopped nuts
Butter Frosting
(recipe follows)
1. Combine butter and sugars in mixing bowl. Beat until creamy and fluffy. Add egg yolk, vanilla, flour, cardamon and salt.
Mix well to form a soft ball of dough.
2. Spread mixture in ungreased 10 x by 15 inch baking pan. Brush surface with beaten egg white.
Sprinkle evenly with nuts.
3. Bake at 275 degrees for 1 hour.
4. Meanwhile, prepare frosting.
Drizzle on warm cookies.

Butter Frosting:
In skillet melt 1 1/2 Tlsp butter untill slightly browns.
Beat in 1 cup powdered sugar and 1/2 tsp vanilla extract.
Add enough milk to bring frosting to drizzling consistency..
Thank you very much for the recipe.... it was the one I have been searching for for 15 years now! Thank you again! There was one more I lost from My Great Recipes. It was called Mexican layered Casserole... I think. Anyhow, you layered boiled chicken, cheese, chiles, and I think some kind of corn chips in it. Would you happen to have that one also?
MEXICAN CHICKEN CASSEROLE
1 chicken, cooked and cut in pieces (or 1 lb. ground beef)
1 med. pkg. tortilla chips
1/4 c. onion
1/4 c. chopped green pepper
Chili powder to taste (1 tsp.)
Garlic powder to taste (1/2 tsp.)
2 cans cream of chicken soup
1 can cream of mushroom soup
1 can Old El Paso tomatoes and green chilies (10 oz.)
1 sm. pkg. Cheddar cheese
In 9x13" pan place tortilla chips. Place meat over chips. Mix soups, can of tomatoes with green chilies, with chili powder, garlic, onion, and green peppers and pour over meat. Grate Cheddar cheese and sprinkle on top.
Bake at 350°F for 1 hour.
Can be prepared ahead of time and refrigerate until ready to bake.
Serves 6-8.
Impossible Mexican Fiesta Casserole Recipe

Yield: 6 Servings
Ingredients
1 lb Lean Ground Beef
Salt & Pepper; To Taste
4 oz Cheddar Cheese; Shredded, = 1 C
1 c Dairy Sour Cream
2/3 c Mayonnaise Or Salad Dressing
2 tb Onion; Finely Chopped
2 c Bisquick Baking Mix
1/2 c Water
Tomatoes; Thinly Sliced, *
3/4 c Green Bell Pepper; Chopped
Paprika; Optional
Instructions
* Use 2 or 3 ripe tomatoes or to taste. Heat the oven to 375 degrees F.
1. Cook and stir the meat in a large skillet until brown. Drain off the excess fat. Season the meat with the salt and pepper, then set aside. Mix the cheese, sour cream, mayonnaise and onion and set this mixture aside. Stir the baking mix and water together until a soft dough forms. With floured fingers, pat the dough in a greased baking pan, 13 X 9 X 2-inches, pressing the dough 1/2 inch up the sides of the pan.
2. Layer the meat, tomato slices, and green pepper onto the dough. Spoon the sour cream mixture over the top and sprinkle with the paprika, if used.
3. Bake uncovered until the edges of the dough are light brown, 25 to 30 minutes. Cool 5 minutes and then cut into squares.
Mexican Casserole Recipe
All of your favorite Mexican flavors in an easy to make casserole.
This one is perfect for a weeknight meal.
Ingredients Directions
- 1 pound ground beef
- 2 cups salsa
- 1 can black beans
- 3 1/2 cups tortilla chips - crushed
- 1 1/2 cups sour cream
- 2 ounces black olives - sliced
- 1/2 cup green onions - diced
- 1/2 cup tomatoes - fresh and diced
- 2 cups Cheddar cheese - shredded
Servings: 6
Enter desired servings:
Container: 9x13 baking dish
Prep Time: 10 minutes
Cook Time: 40 minutes
sour cream over the beef mixture. Sprinkle green onions, black olives and diced tomotoes over the sour cream.
Then top with the cheddar cheese.
Bake for 30 minutes or until it is nice and bubbly.
Serve with a nice salad and bread.
