Ingredients
1/2 teaspoon hickory salt
2 tbsp or butter
3 chopped shallot
1 tsp Fresh Tarragon, roughly chopped
2 tbsp Lemon juice
1 cup dry wine
1/2 teaspoon salt
1/4 sugar
4 6-ounce 1 ounce thick, Salmon Steaks
Directions
Preheat oven to 400 degrees F.
1. Wash the salmon steaks. Drain; pat dry with paper towel.
Sprinkle both sides with hickory. On each, place several
sprigs, wrap each completely bacon , sprinle with dried tarragon.
2. To cook indoor; prepare broiler;Arrange on rack in broiler pan.
Broil: 4 inches from heat 10 mins, turn.
Broil 8 more mins, until salmon is flaky.
3. Meanwhile: make
Sauce; In hot butter , saucepan
saute shallotts, about 5 mins. Add tarragon and parsley, cook 1 mins.
Add wine, salt, sugar, cook, stirring until hot.
4. To cook outdoors: Adult grill 4 inches from flame.
Cook until bacon is brown.
Cook 5 mins.
Makes 4 servings.
Serve at once, garnish with a sprig of fresh tarragon.
