Roasted cornish game hens

I am looking for a recipe that I found on a packaged rice mix. (I don't know the brand).
The recipe was for roasted Cornish hens that were
stuffed with the package rice mix. I believe it was long-grained white rice and wild rice, but I'm not sure. It may have had apples in it. I do remember that the glaze was made with apple butter. It was so good, but I tossed the recipe and I have not seen it on any rice mix since! Please help!!!

Stuffed Cornish Hens

Light & Tasty

Stuffed with a succulent combination of wild rice, mushrooms and dried cranberries these golden hens are sure to become a special-occasion entree in your home. "They're a wonderful change of pace from traditional turkey," writes Nancy Horsburgh of Everett, Ontario.

Ingredients:

1/2 cup chopped celery

1/4 cup sliced fresh mushrooms

2 tablespoons butter

1 package (6 ounces) fast-cooking long grain and wild rice mix

1 can (14-1/2 ounces) reduced-sodium chicken broth

1/4 cup water

2/3 cup sliced water chestnuts, chopped

1/2 cup dried cranberries

1/2 cup chopped green onions

2 tablespoons reduced-sodium soy sauce

5 Cornish game hens (20 ounces each)

Directions:
In a large saucepan coated with cooking spray, cook celery and mushrooms in butter until tender. Stir in rice; cook 1 minute longer. Stir in the contents of the rice seasoning packet, broth and water. Bring to a boil. Reduce heat; cover and simmer for 5-6 minutes or until rice is tender. Stir in the water chestnuts, cranberries, onions and soy sauce. Stuff into hens.
Place on a rack in a shallow roasting pan. Bake at 375? for 50-60 minutes or until juices run clear and a meat thermometer inserted into stuffing reads 165?. Cut each hen in half lengthwise to serve. Yield: 10 servings.

GLAZED ROCK CORNISH HENS AND APPLE
STUFFING

2 cornish hens
1/4 c. butter
1 tsp. salt
1 tsp. pepper
1 tsp. paprika
1 c. celery
2 apples
1 1/2 c. cook wild rice
1 can apple juice
2 tbsp. cornstarch

1. Preheat oven to 325 degrees. Remove giblets and necks from hens; rinse and drain hens. Cook giblet with hens and use in stuffing. Cook hens breast side up in roasting pan. Roast hens brushing occasionally with melted butter for 35 minutes.
2. Meanwhile for stuffing chopped celery, apple and rice together. Stuff hens. Put rest of stuffing around hens and cook 20 minutes more until hens are lightly brown.

Glaze: Put 1 can undiluted apple juice in a pan add 2 tablespoons cornstarch and bring to a boil or until juice is slightly thicken.

CORNISH HENS WITH APPLE GLAZE

4 (1 lb. each) Cornish hens
1 c. undiluted apple cider concentrate
1/4 tsp. ground cinnamon
1 tbsp. cornstarch
3 lemon slices

Wash and lightly salt the hens and arrange them in a small pan. In a saucepan combine cider, cinnamon and cornstarch. Mix with wire whisk until smooth. Add lemon slices, cook and stir cider mixture over medium heat until it thickens. Brush this glaze over the hens. Roast the hens at 375 degrees for 50 minutes to 1 hour or until they are fork tender, basting with additional sauce several times during cooking. Cut hens in half and serve.

Preheat oven to 350 degrees. Using a sharp knife or kitchen shears, cut the cooked chicken into quarters and place in a single layer in a baking pan that has been sprayed with nonstick cooking spray or lined with foil.

Whisk together apple butter, steak sauce, honey mustard and cocoa until well blended. Brush generously over the chicken and place baking pan into the preheated oven; cook uncovered for about 20 to 30 minutes, or until heated through.

Line a platter with lettuce leaves; place cooked chicken quarters over the greens and sprinkle lightly with green onions. Garnish with fresh apple slices and serve while hot.

Makes 4 servings.

Note the easiest chicken dish in my arsenal! It tastes as if it involves a lot of preparation, yet is quick and simple enough to pop in the oven after a busy day of work or meetings and delicious and impressive enough for guests. Dont be put off by the small amount of cocoa its barely discernable and provides an interesting depth of flavor to the amazing glaze. ( I use A-1 Steak Sauce.)
