Toasted coconut ice cream balls

As a child, my mother made me toasted coconut ice cream balls. I know she rolled them in something before the toasted coconut, but cannot remember what. Does anyone have this recipe?

, I've seen them made with a combination of crushed almonds and coconut and also with graham cracker crumbs.

Ice Cream Toppings
The many flavors of ice cream can be served with a variety of toppings.
*Spoon Fresh Fruit over the ice cream. My husband likes mashed and sweetened strawberries. I enjoy fresh blueberries with my ice cream. Peaches also make a tasty combination.

*Hot Chocolate, Carmel, or Butterscotch toppings are very popular, especially when whipped cream is added. You might sprinkle over chopped nuts and add a cherry.

*Nutmeg grated or sprinkled over vanilla ice cream makes an interesting variation some people enjoy.

*Cereal toppings are tasty, too. Crush some of your favorite cereal, sweetened or not, and sprinkle over your favorite ice cream. Some like to stir the cereal into the ice cream.

*Crushed Cookies of your favorite type also add flavor to ice cream.

*Coconut, plain or toasted, can be sprinkled over a dish or ice cream or sundae.

*Ice Cream Balls - Scoop balls of ice cream and roll in coconut., crushed cookie or cereal crumbs and/or chopped nuts. Serve plain or with sauce.

These are just a few of the many ice cream ideas you can serve. Use your imagination and you'll create many more.

Pastel coconut ice cream balls


Yield: 16 Servings

3 cup Flaked coconut

Red, blue, green and yellow food coloring

1/2 gallon (8 cups) vanilla ice cream

Line large cookie sheet with waxed paper. Place 3/4 cup of the coconut in each of 4 plastic bags.

Add 2 to 3 drops red, blue, green or yellow food coloring and 2 to 3 drops water to each bag; close bag.

Shake coconut until desired color is reached. Using 1/2 cup ice cream scoop, shape ice cream into 16 balls.

Place on paper-lined cookie sheet; freeze until firm. Empty each bag of tinted coconut onto a separate sheet of waxed paper.

Remove ice cream balls from freezer. Working quickly, roll each ball in desired color of coconut; return to cookie sheet.

Chocolate sprinkles; thawed frozen or canned peaches.

Salted peanuts; Quick Butterscotch Sauce.

Crumbled crisp cookies; melted jelly.

Semisweet-chocolate pieces; Custard Sauce.

Sugar-coated cereal; crushed strawberries.

Crushed peppermint candy; Semisweet Sauce.
