In the '80s, when I lived in New York, I fell in love with
Freihofer's CHEESE-FILLED PASTRY, which was sold along with coffee cakes in supermarkets. Freihofer's Bakery has since merged into a large conglomerate, and apparently now makes only breads and rolls ... Is anybody familiar with the mouth-watering "lost" pastry I remember? (I believe it was made with phyllo dough, although most of those I see online are intended as dinner foods -- The one I'm referring to is sweet, and is covered with a sprinkling of powdered sugar.) Surely there's a similar recipe out there somewhere? ...
CHEESE POCKETS
2 (8 oz.) pkgs. cream cheese
5 well beaten eggs
1 lb. Phyllo pastry
2 c. melted butter
confectioner's sugar
Preheat oven to 375 degrees. Mix cream cheese and eggs. Place a sheet of phyllo on work surface and brush with butter. Repeat this until there are 4 layers. Cut into 3 inches squares. Put 1 teaspoon of filling on square. Fold into a pocket and seal with butter. Bake 15 minutes. These freeze well. Brush with butter before freezing. Bake frozen for 20 to 25 minutes. Dust with confectioner's sugar.
