GREAT AMERICAN RECIPE BARBECUED CHICKEN BREASTS

For 4 servings:

4 Tablsp oil

4 Tablsp soy sauce

2 Tablsp lemon juice

1 Tablsp brown sugar

2 cloves minced garlic

1 tsp dried thyme or basil leaves

3 whole cloves

Dash of pepper

TIPS:

You may also marinate the chicken breasts in ready made barbecue sauce.

Let them stand at room temperature for 3 hours.

Turn to coat well.

Baste chicken with sauce the last 2 minutes of barbecuing time.

Preparation:

  1. Wash chicken breasts, pat dry.

  2. For marinade, blend together oil, soy sauce, lemon juice and brown sugar.

  3. Place chicken breasts in a single layer in a glass dish.

  4. Sprinkle with garlic, pepper, thyme or basil leaves and cloves.

  5. Pour marinade over chicken. Let stand in refrigerator

for at least 4 hours, turning over from time to time.

  1. Preheat grill.

  2. Place chicken on grill, a few at atime. Baste with marinade.

  3. Grill for about 5 minutes on one side and 9 minutes on the other

side, till chicken is fork tender, juices run clear when pierced with a fork

and chicken is light browned. Don't overcook.

  1. Garnish with fresh thyme or basil leaves or parsley.

  2. Serve with chutney, cooked over rice and a tossed salad.
