BLACK WALNUT CAKE

3 c. sugar
3 c. flour (all-purpose)
2 Tbsp. walnut flavoring
2 sticks margarine
1/4 tsp. salt
1 tsp. each cloves, nutmeg
1/2 c. Crisco oil
1 small can milk (add water to
make 1 c.)
2 small cans black walnuts,
chopped
5 large eggs
Cream shortening, sugar and salt. Add eggs one at a
time. Add flour, spices and milk alternately, ending with flour. Fold
in flavoring and nuts by hands. Bake in greased tube pan for 1
hour 45 minutes at 325 degrees. Start in a cold oven. Do NOT open
door while baking. Remove from pan immediately.

CREAMY MAPLE FROSTING

1/4 c. shortening, butter or
margarine
1/2 tsp. salt
1/3 c. maple syrup
2 tsp. vanilla
3 c. confectioners sugar
2 Tbsp. milk
Combine shortening (butter or margarine), salt, syrup,
vanilla and 1 cup of sugar. Add milk and remaining sugar
alternately. Mix until smooth and creamy. To thicken, add
sugar; to thin, add milk.

MAPLE FROSTING

1 (8 oz.) pkg. cream cheese,
softened
1 1/2 lb. confectioners sugar,
sifted (about 6 c.)
2 tsp. maple flavoring
dash of salt
1 to 2 Tbsp. milk
In large mixer bowl, beat cheese until fluffy. Add
sugar, flavoring, salt and 1 tablespoon milk. Mix well. Add
additional milk, 1 teaspoon at a time for desired consistency.
