We use their sugar, Splenda Brown, Splenda
Baking, and yellow box splenda for our drinks.
Husband has been a diabetic for 22 years.

2 Pkg. orange jello (with NutraSweet)(sugar free jello) -- (3 oz.)
1 C. very hot water
1 C. fruit juice from oranges and pineapple
1 Small Can orange juice concentrate -- frozen
1 Can medium-size Mandarin oranges
1 Can medium-size pineapple chunks in their juice or water
1 Pkg. instant lemon pudding mix (with -- (3 oz.)Jello brand-sugar free
NutraSweet)
1 C. milk
4 Oz. Cool Whip nondairy topping
Mix orange jello with very hot water; stir until dissolved.
Add fruit juice from oranges and pineapple. Add
orange juice. Add Mandarin oranges and pineapple chunks; pour
in 9 x 12-inch size pan; refrigerate until set. Take pudding
mix; mix with milk until thick. Add at least 4 ounces Cool
Whip; spread over top of chilled jello. If lemon instant
pudding is not available, use vanilla with a little ReaLemon to
flavor.

Sugar-free Jello chocolate pudding
Sliced bananas
SPREAD ONE GRAHAM CRACKER WITH SUGAR-FREE CHOCOLATE PUDDING THAT HAS BEEN MADE
UP, THEN TOP WITH THINLY SLICE BANANA. PUT OTHER GRAHAM CRACKER ON TOP. WRAP
AND FREEZE. WHEN THAWED IT IS GOOEY. Exchanges: 1 starch. When making - be sure
to break each long graham cracker in half. This was given to me by a dietician
at Riverside Hosptial in Newport News, Va.

My father-in-law is diabetic. Here are a couple of good recipes I make.
Diabetic Raspberry Crunch Brownies
(from Rita Winterberger-Taste of Home)
1/4 cup oil 1/4 tsp salt
1 1/4 cup sugar 2/3 cup baking cocoa
4 egg whites 1 1/2 tsp vanilla extract
1 cup flour 1/4 raspberry jam (can use sugar-free)
1/2 tsp baking powder 2 Tbsp Grape-Nuts cereal
In a mixing bowl, beat oil and sugar. Add egg whites and continue beating until well mixed. Combine flour, baking powder, salt and cocoa. Add to egg white mixture and beat until moistened. Stir in vanilla. Batter will be thick
Spread batter into a 9-in square baking pan with a nonstick cooking spray. Bake at 350degreesF for approximately 18-20 minutes (don't overbake) or until toothpick comes out clean. Cool 10 minutes on a wire rack. Spread with jam and sprinkle with Grape-Nuts. Cool completely.
Note: One brownie has 105 cal, 3g fat, 19g carbs, 2g protein (1 starch and 1/2 fat exchanges).
