CHICKEN RATATOUILLE
For 4 sevings you will need:
4 boneless chicken breasts; cut into cubes
1/4 cup vegetable oil
2 small zucchini, cut into cubes
1 small eggplant, cut into cubes
1 large onion, chopped
1 medium bell pepper, chopped
1/2 lb mushrooms, sliced
1 can (16oz) tomatoes
2 cloves garlic, minced
1 Tlbsp Italian herbs
Salt and Pepper
(TIPS)
You can reduce water in the vegetables, by sprinkling
with a little salt, let set 30 minutes, Drain and use.
1. In a large skillet, heat the oil.
2. Cook the chicken over medium heat 3 minutes, stirring constantly.
3. Add the vegetables, garlic and mushrooms.
4. Cook for additional 2 minutes. Add tomatoes, stirring carefully.
5. Add the Italian herbs, salt and pepper. Simmer, uncovered 10 minutes.
The dish is done when the chicken and vegetables are tender.
Good with Steamed white rice and fresh salad.
