D'Liteful Pumpkin Cheese Cake
A list of ingredients you will need:
Crust:
1 1/2 cups graham cracker crumbs
3 Tablespoons Domino Pure D'Lite Sugar Blend
3 Tablespoons butter, melted
Cheesecake:
4 (2 reduced fat,2 regular) packages of cream cheese, softened
1 1/2 cups Domino Pure D'Lite Sugar Blend
4 eggs, room temperature
2 Tablespoons maple syrup
1 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 cup Fat Free Evaporated Milk
1 cup pure pumpkin
Topping:
2 cups sour cream (reduced fat works just fine)
1/4 cup Domino Pure D'Lite Sugar Blend
1 Tablespoon maple syrup
Preheat oven to 325 degrees.
Crust: Melt butter and mix with sugar and crumbs. Press firmly onto bottom of 9" springform pan. Bake at 325 degrees for 10 minutes.
Cheesecake: Beat cream cheese and sugar blend until well blended. Add eggs, one at a time, mixing on low speed. Add remaining ingredients and mix until blended. Pour mixture over crust. Bake at 325 degrees for 1 hour and 5 minutes or until center is almost set. Keep oven on.
Topping: Combine sour cream, sugar and syrup. Remove cheesecake from oven and top with sour cream mixture. Return to oven for additional 15 minutes. Allow cake to stand at room temperature for 1 hour. Loosen cake from rim, but do not remove remove from cake. Cool completely before removing rim. Refrigerate 4 hours or overnight.

Molasses Ginger Cookies
A list of ingredients you will need:
1 tablespoon ground ginger
1/2 teaspoon ground pepper
1/2 teaspoon ground all spice
1/2 teaspoon salt
2 1/2 cups all-purpose flour
2 teaspoons baking soda
3/4 cup butter, room temperature
1 cup Domino Pure D'Lite Sugar Blend
7 tablespoons molasses
1 egg
1/2 teaspoon vanilla
sugar for sprinkling, optional
Mix spices, salt, flour and baking soda in a medium size bowl. In a separate bowl, cream butter and sugar blend. Add molasses and egg, beat until thoroughly blended. Slowly add flour until just combined. Turn out onto plastic wrap. Freeze for 30 minutes to chill.
Preheat oven to 350 degrees. Scoop dough by teaspoon. Roll into a ball. Place on baking sheets lined with parchment paper. Flatten. Sprinkle lightly with sugar, if desired. Bake at 350 degrees for 12 minutes or until brown, rotating parchment sheets after 7 minutes. Cool. Makes about 50 cookies.
NOTE: If dough become difficult to work, place back in freezer to chill.

Lemon Meringue Layer Cake
A list of ingredients you will need:
Cake
1/2 cup butter
1/2 cup vegetable shortening
2 cups Domino Pure D'Lite Sugar Blend
3 cups cake flour, sifted
4 tsp baking powder
1 tsp salt
2/3 cup milk
2/3 cup water
2 tsp vanilla extract
1 tsp lemon extract
6 egg whites
1/8 tsp cream of tartar
Lemon Filling
1 cup Domino Pure D'Lite Sugar Blend
1/4 cup cornstarch
3 egg yolks (reserve whites for frosting)
1 cup cold water
grated zest of one lemon
1/4 cup lemon juice
1 TBSP butter
Frosting
3 egg whites
1 cup Domino Pure D'Lite Sugar Blend
2 TBSP light corn syrup
1/8 tsp salt
1/2 tsp vanilla
Cake
Cream butter and shortening until well blended. Gradually add Domino Pure D'Lite Sugar Blend. Beat until thoroughly blended and light in color.
Sift cake flour, measure and sift again with baking powder and salt. Stir milk into water.
Add flour and milk alternately to the butter mixture. Beat on low until thoroughly blended. Stir in vanilla and lemon extracts.
Add cream of tarter to egg whites. Beat on high speed until stiff, but not dry.
Preheat oven to 350 degrees. Grease and flour three 9 inch cake pans for thin layers. For thicker layers use three 8 inch pans.
Gently fold the beaten egg whites into the batter. Divide batter evenly among the three pans. Bake for 20-25 minutes or until cake springs back if lightly touched in center.
Lemon Filling
Whisk sugar with cornstarch in a medium sized saucepan. Add water, yolks and lemon zest. Whisk all at once until smooth. Stirring constantly cook over medium heat until very thick. Mixture should become like a paste. Remove from heat and whisk in the lemon juice, and butter. Whisk for a minute more. Set aside to cool completely. Stir occasionally to ensure smoothness.
Assemble cake
Place one cake layer on plate. Spread with half of lemon filling. Top with second layer, spread with remaining lemon. Top with third layer. Set aside.
Frosting
Place egg whites, Domino Pure D'Lite Sugar Blend, corn syrup and salt in the top half of a double boiler. Beat 30 seconds on high speed of electric mixer. Place blended mixture over gently boiling water and cook, beating constantly with mixer on high speed for 6-7 minutes or until very stiff and fluffy. Remove from heat, add lemon juice or vanilla. Continue beating 1-2 minutes until frosting reaches a good spreading consistency.
Quickly spread frosting on the top and sides of cake.
Note: Filling will become slightly translucent when cake sits overnight

Pure De-lite Low Carb Chocolate Bars
Pure De-lite chocolates are lactose free, sugar free and low carb. With 0g of effective carbs, these are perfect snacks for dieters who crave chocolate.
Each bar is 1oz, just the right size for snacking on with a glass of port by a fire. The dark chocolate is a rich Belgian style blend, while the milk chocolate is creamy. They have other styles too, with toffee and other confections. My favorite is the milk chocolate with crisps - while I can get dark chocolate in many styles of low carb, it's hard to find a version of Nestles Crunch which is good for the diet!
We get these in boxes of 6 bar multi-packs for about $5 at WalMart. That's under a buck per bar, and this isn't cheap quality chocolate, either. It isn't quite on par with some of the gourmet chocolates that we've sampled, but it's hard to beat the price.
These are sweetened with 14g of maltitol per bar, and while some people have no effect at all from maltitol, others find that their weight loss completely stops when they ingest sugar alcohols. So always be careful about your sugar alcohol intake and stop with the sweets if you find yourself stalling. Part of the aim of a low carb diet should be to de-sweeten you, not to ingest pounds of sugar alcohol each day :)
Still, for an occasional reward for a job well done, the De-Lites fit the bill! We keep a box or two around the house. They always come in handy for shaving over ice cream, chopping into chips for homemade chocolate chip ice cream, or many other recipes.
