Anasazi Bean and Cabbage Soup
(crock pot recipe)
1 pound dried Anasazi Beans, soaked overnight
1 cup diced celery
1 cup diced carrots
1 cup diced onion
2 cups very finely chopped cabbage
2 cups ham, cut into small dice
ham rind if available
(remove for the last few hours of cooking time)
8 cups water
ham bouillon (optional but recommended. I used Goya Ham Flavor Concentrate. I start with 2 packets, then taste the soup for flavor after 8 hours and add more as needed. Use of this will depend entirely on how much flavor is in your ham. If you have really good ham you might not need it.)
2 T dried parsley
1-2 T garlic powder
2-3 tsp. onion powder
2-3 bay leaves
fresh ground black pepper to taste
This will fill a large crock pot, so if you have a smaller size you will need to reduce the recipe. Put all ingredients in crock pot. It will look like there is not enough liquid, but in the crock pot foods give up liquid and you end up with lots more than you started with. Cook on high 10 hours or more, until about half of the beans have disintegrated into the soup and the cabbage is mostly dissolved. After about 8 hours, taste for seasoning and add more ham buillon, garlic powder, or onion powder if needed. (I nearly always add more.)
You could cook this on the stove if you don't have a crock pot or want it done sooner than 10 hours. I would increase the amount of water if I cooked it on the stove, and it would still need several hours of cooking time.
If you're following a lower carb eating plan, these beans would be good with a side dish like Cucumbers Caesar, American Greek Salad, or Spinach Salad with Bacon Dressing. It's also hearty enough to be a meal in itself, maybe with a couple of slices of cheese.

Goulash Soup with Cabbage
2 onions, cut half both ways, then in thick slivers
2 tsp. finely minced garlic
1 T olive oil
2 T sweet Hungarian Paprika (I recommend Penzeys)
1 T hot Hungarian Paprika (I recommend Penzeys)
1/2 tsp. crushed caraway seed (optional)
4 cups homemade beef stock (or 3 cans)
3 cups roasted tomatoes (or 2 cans diced tomatoes - I recommend Muir Glen Fire Roasted Tomatoes if using canned)
2 cups finely diced cabbage
1 lb. lean ground beef (ground chuck is best)
1 jar (12 oz.) roasted red peppers, diced into 1 inch pieces
sour cream for serving (I use light, do not use fat free)
Heat large heavy frying pan, add oil, and saute onions about 5 minutes, until barely starting to color. Add garlic and saute 2 minutes more, then add paprika and caraway if using and saute 1 minute more.
Put onion/spice mixture into large soup pot. Deglaze pan with 1 cup of beef stock, then add that and rest of beef stock to soup pot. Add roasted tomatoes, cabbage and 2 cups water to soup pot and start to simmer.
Brown ground beef in frying pan until quite brown, breaking into small pieces as it cooks. When browned add to soup pot. Let simmer on very low heat one hour. (Taste for seasoning and add more paprika if desired. I personally think you can never have too much paprika in a soup like this.) After one hour, add diced red peppers and simmer one hour more. Serve hot, garnished with sour cream. This freezes very well.
I served this for lunch with a freshly baked loaf of 100% whole wheat bread. (Ok, I confess I used a bread machine and a mix from Bob's Red Mill to make the bread, but my friend was still quite impressed.) For dinner, add something like Arugula and Sweet Mini-Pepper Salad for even more great antioxidants.

I got the recipe out of Women's World magazine last month
When I first heard about the Cabbage Soup Diet I thought, gross! I hate cabbage and the thought of having to eat it for 7 days straight was disgusting. After hearing about the specifics of both the soup and the diet from a friend I decided to give it a try.
I had a baby 7 months ago and although I have lost all of my pregnancy weight, I am still trying to lose a bit more. A friend who also had a baby several months ago started the diet with me as a support.
The Cabbage Soup Diet is advertised as a "crash diet" meaning you lose a lot of weight very quickly (or so they say). The diet lasts 7 days. After 7 days you are to take a week off and then can resume the diet again. It does not only consist of the soup, but also various items each day. Although it is called Cabbage Soup, it was more like vegetable soup to me.
I have been on the Cabbage Soup Diet now for 3 days. It was hard the past 2 days. I was hungry a lot, but now my body has adjusted to the diminished amount of food and I am getting used to the way this diet works. I weighed myself tonight and I have already lost 4lbs!
Here is how the diet works. The main staple of this diet is the soup. You make the soup yourself, but there is a recipe that you follow. I got the recipe out of Women's World magazine last month. The items needed for the soup are:
Head of cabbage
celery stalks (a few)
1 onion..red or white doesn't matter
1 can tomatoes (crushed preferred)
Scallions, chopped
you are able to add any vegetable you want except for potatoes.
Fat Free Beef Broth
I added garlic powder, salt and pepper to mine to give it some flavor. The soup cooks for 45 minutes as the broth thickens.
Here is your daily allowance of food:
Day1
As much cabbage soup as you would like, as much fruit as you would like but NO bananas..bananas slow your metabolism
Day2
As much cabbage soup as you would like, as much vegetables as you would like except for corn, peas and green beans. You must eat 1 baked potato with butter only.
Day3
As much cabbage soup as you would like, as much vegetables as you would like but NO potatoes
Day 4
As much cabbage soup as you would like, up to 3 bananas and up to 3 glasses of skim milk(8oz glasses)
Day 5
As much cabbage soup as you would like, up to 20% of any kind of beef
Day6
As much cabbage soup as you would like, as much baked chicken, fish OR beef as you would like
Day 7
As much cabbage soup as you would like, as many vegetables (no peas, corn or green beans) and fruit (no bananas) as you would like
It's that simple. Although I have only gone through 3 days so far, the diet has gone smoothly for me.
There are some drawbacks and side effects to this diet. It is repetitious, its hard only eating soup all day long. It does give you gas and some stomach upset. Being as it lasts only 7 days, I am willing to stick with it and see what happens.
Thus far, I would recommend this diet to those who want to lose weight in a short amount of time. Exercise is a requirement while doing this diet, otherwise all the weight lost will quickly come back once your 7 days are over.

Spicy Cabbage Soup
The unusual combination of vegetables in this healthy soup are brought together beautifully with the spices. The Healthy Sauté cooking method makes it light and healthier without heating oils or compromising flavor. Feel free to add more spices and chili pepper if you like it spicier. If you have the time, let this soup simmer for a little longer for a richer taste.
Prep and Cook Time: 45 minutes
Ingredients:
1 medium sized onion, quartered and sliced thin
3 medium cloves garlic, chopped
1-2 tsp minced fresh red chili pepper (serrano, or jalapeno)
2 tsp ground coriander
1 TBS dry mustard
5 cups + 1 TBS chicken or vegetable broth
2 TBS fresh lemon juice
2 medium sized red potatoes cut in 1/2 inch cubes, about two cups
1 15oz can diced tomatoes
3 cups thinly sliced Savoy or green cabbage,
salt and black pepper to taste
Directions:
Heat 1 TBS broth in a medium soup pot. Healthy Sauté sliced onion over medium heat for about 5 minutes. Stir in garlic and minced chili pepper. Continue to sauté for another minute.
Stir in dried coriander and mustard, and add broth, and rest of ingredients except cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until potatoes are tender.
Add cabbage, and cook for another 5 minutes. Season with salt and pepper to taste.
Serves 4

Hollywood diet in Womans World

1C. Low-fat vanilla soy milk
1C. orange juice
1C. cranberry juice
1C. yogurt w/active cultures
1/4tsp. wheat-germ oil or 2T. wheat germ
1/4 tsp. flaxseed oil

1/4 c Packed cilantro or parsley

This savory soup is seasoned with nutty-flavored cumin
and topped with a creamy salsa.
Prep time: 10 minutes Cool time: 10 mintes Cook time:
45 minutes
Ready to serve: 1 hour, 5 minutes.
Cilantro sprig for garnish
In large saucepan, saute cliced carrots, chopped
onion, cumin, and ginger in oil 20 minutes. Add
chicken broth and 2 cups water to saucepan. Increase
heat to high and bring to a boil. Cover and simmer
15-20 minutes until vegetables are tender. Remove
saucepan from heat and let cool slightly, about 10
minutes.
In small bowl, combine chopped tomato, sour cream and
chopped cilantro;chill until ready to serve. Place
soup in batched in food processor of blender; puree
2-3 minutes until smooth. Return to the saucepan;
over med/high heat, cook 5 minutes more, until heated
through. Ladle soup into bowls. Top with sour cream
mixture. Garnish.

Mac 'n Cheese Soup

1 cup elbow macaroni
3 tablespoons butter, softened
1/2 cup onions, chopped
2 (10 3/4 ounce) cans condensed cheddar cheese soup
1 (14 1/2 ounce) can chicken broth
1 teaspoon mustard powder
1/4 teaspoon cracked pepper
1 (8 ounce) package cheese, shredded
1 cup milk
1 teaspoon worcestershire sauce
6 slices French bread or Italian bread (1/2-inch thick)
Cook pasta according to package directions until almost tender; drain.
Preheat broiler.
In same pot, melt 2 tablespoons butter over medium-high heat. Add onion; cook, stirring occasionally, until tender. Whisk in undiluted soup, broth, 1 1/2 cups water, mustard, and pepper. Bring to a boil; reduce heat to medium. Stir in milk, Worcestershire sauce, and pasta; heat through.
Spread remaining butter over top of bread slices. Place on ungreased baking sheet; sprinkle with remaining cheese. Broil until cheese is melted, 1-2 minutes. Divide soup among 6 bowls; top with toasts or extra cheese.
Cabbage Soup Diet
Recipe:
The cabbage soup can be eaten at any time you feel hungry during the day, and you can eat as much as you wish as often as you like.
Ingredients:
6 Large Green Onions
2 Green Peppers
1-2 Cans Diced Tomatoes
1 Bunch Celery
1 Package Lipton Onion Soup Mix
1-2 Cubes of Buillion (if desired)
1 head cabbage
Cut vegetables into small pieces and cover with water. (V-8 juice and water can be used). Boil fast for 10 minutes. Reduce to simmer and continue cooking until vegetables are tender. Season to taste with salt, pepper,parsley, etc. EAT AS MUCH AS YOU WANT WHENEVER YOU WANT ANY TIME OF THE DAY.
Diet Plan:
Day One:
Fruit: Eat all of the fruit you want (EXCEPT BANANAS). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water.
Day Two:
Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup. At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today.
Day Three:
Mix Days One and Two: Eat all the soup, fruits and vegetables you want. NO BAKED POTATO.
Day Four:
Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses of skim milk as you would like on this day, along with your soup. This day is supposed to lessen your desire for sweets.
Day Five:
Beef And Tomatos: Ten to twenty ounces of beef and up to six fresh tomtoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body. Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer, you can substitute broiled fish for the beef one one of the beef days (but not both).
Day Six:
Beef and Vegetables. Eat to your heart's content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables. NO BAKED POTATO. Eat your soup at least once.
Day Seven:
Brown rice, unsweetened fruit juices and vegetables: Again STUFF, STUFF, STUFF yourself. Be sure to eat your soup at least once this day.

Basil-avocado soup
Yield: 6 servings
3 Avocados; peeled & pitted
1 c Reduced-fat sour cream
1/2 c Fresh basil; chopped
2 tb Lemon juice
1/4 ts Pepper
2 1/2 c Chicken stock
Avocado slices, sour cream
And Basil sprigs to garnish
In a processor or blender, combine avocados, sour cream, basil, lemon juice and pepper; puree until smooth.
Add chicken stock; process until smooth. Serve and garnish with avocado slices, a dab of low-fat sour cream and basil.
Per serving: 233 cal. 5 g protein, 19 g fat, 7 mg chol., 14 g carbs, 367 mg sodium.
