This Vegan Tofu Egg Salad is delicious!! Super easy to make and tastes just like the real thing.

⅓ cup vegan mayonnaise
1 tablespoon nutritional yeast
2 teaspoons Dijon mustard
¼ teaspoon black or white pepper
¼ teaspoon ground turmeric
½ teaspoon black salt (kala namak)(this salt is essential - gives the egg smell and taste)
1½ cups extra-firm tofu, cut into ¼-inch cubes (1/2 a brick)
3 tablespoons minced red onion
3 tablespoons minced celery
Directions
In a mixing bowl, whisk mayonnaise, nutritional yeast, Dijon mustard, black salt, pepper and turmeric.
Add cubed tofu to the bowl and mash with a fork to combine until an egg salad consistency is reached. Add diced onions and celery and gently fold together.
Love it as a salad with avocado and sunflower seeds
