Sweet Potato Balls

These delicious sweet potato balls are a fantastic, easy and healthy starter recipe. They’re vegan, gluten free and can be frozen to be saved for another day. You could also serve these as a nutritious and delicious side dish if you’d prefer.

Ingredients

2 sweet potatoes
15g/0.5oz kale, finely chopped
1 shallot, finely chopped
2 tbsp. coconut milk
1 tsp. garlic powder
1 tsp. cumin
Flax seed to top

Ingredients

2 sweet potatoes
15g/0.5oz kale, finely chopped
1 shallot, finely chopped
2 tbsp. coconut milk

1 tsp. cumin
Flax seed to top

Directions

  1. Preheat the oven to 200C/390F.

  2. Peel and chop the sweet potatoes and place in a pan of boiling water. Simmer for 20 minutes (until softened).

  3. Drain the potatoes, then mash with the coconut milk.

  4. Mix in the rest of the ingredients (except for the flax seed), then form into small balls.

  5. Sprinkle the flax seed on top of the balls, then bake for 20-25 minutes.
