100 grams whole-grain oats
100 grams pastry flour
1 pinch salt
3 eggs
200 milliliters milk (low-fat)
2 teaspoons clarified butter
4 tablespoons maple syrup (for serving)

Directions

  1. Mix the oatmeal, flour and salt. Whisk the eggs and milk, and allow the mixture to rest and swell for 30 minutes.
  2. In a nonstick skillet, heat the butter, and pour in your desired size pancake. Cook on both sides. The finished pancakes should be kept in the oven at 80°C (approximately 180°F) to keep them warm.
  3. For serving: Stack the warm pancakes on a plate and cover with maple syrup. Enjoy.
