Another old favourite traditionally made with eggs, Matza Brei is a Passover classic and an ideal Breakfast (Lunch, Dinner or mid-afternoon snack if you ask my Brothers). If you eat Soy on Passover, this is awesome. Otherwise just wait a week ;)

400g Firm Tofu
200ml Soya Milk
100g Engivita
6 Slices Matza

200ml Soya Milk

Directions

Drain the Tofu (no need to press it) and mulch it up like you're making scrambled tofu.

Stick it into a pan of hot oil and leave it to fry gently, stirring it now and then.

While that's cooking, mix the Engivita with Soya Milk until it's all dissolved.

Crush up the Matza into small pieces (around 1cm is good) and mix in.

Leave the Matza to soak up some of the Engivita mix and stir the tofu a bit.

After a couple of minutes, add the Matza mix to the Tofu in the pan and crank the heat up a little.

Cook it all for about another 5 minutes, allow it to brown and crisp a little on the pan before you mix it.

Serve it hot with Ketchup!
