Blanch a bunch until the leaves turn vibrant green and tender, then choose the 15 largest for wrapping while chopping the rest into your filling.

Ingredients
2 bunches collards
3/4 cups OJ
1/4 cup tahini
2 cups brown rice
15 oz black lentils
1 red bell pepper
2 tsp toasted sesame seeds
Directions
Cook collards and reserve 15 largest leaves. Cut up the rest. Combine rest of the ingredients and roll up.
